Harbor Docks Edwin Mccain Concert

I just love living in Destin Florida, there is always something fun happening around town! Just a few weeks ago my husband and I had a blast going out to Harbor Docks Destin to snap some photos of Reed Waddle preforming and Edwin Mccain in concert. My husband and I are both such music lovers and really enjoyed our night listening to some great musicians and eating some delicious sushi. Here are some pictures from our fun filled night!

Cooking in the kitchen

I happend to be cooking up some food in my kitchen today, so decide to get the camera out and make my food art by snapping photos of it.
I thought it would be nice also to leave the recipes on how to make this awesome food, (just in case you get hungry from looking at these photos of food). So here’s the first recipe, this hummus is super yummy and beyond easy to make, it’s always good to have hummus at the house to snack on while watching a movie or just because your hungry. I made the recipe up today so here it is
* Greek Hummus
1 can (16 oz) chickpeas, rinsed and drained
1/2 cup non-fat greek yogurt
1/4 cup tahini
1/4 cup olive oil
juice of 1/2 lemon
4 cloves garlic
1 tsp sea salt

Combine all ingredients in food processor and mix until smooth. After making hummus I really had to make something prefect to dip in it, so I searched for a good greek pita bread recipe and came across this really cool blog http://www.kalofagas.ca/2009/11/11/vefas-pita-bread/
the recipe was not to hard to make, and on the flip side it made our house smell like bread. I posted the recipe on my blog if you feel like making some good ole pita bread Vefa’s Pita Bread
3 1/2 cups all-purpose flour

1 tsp. salt

1 1/2 tsp. active dry yeast

1 tsp. sugar

2 Tbsp. olive oil

1 1/2 cup warm (body temperature) water

coarse corn flour/cornmeal) for dusting – not corn starch (Corn starch is labeled/called corn flour in Greece but to the rest of the world, corn flour and cornmeal are one & the same)

vegetable oil for greasing the pan

In a large bowl, add the water, olive oil, yeast, salt and sugar and let stand for five minutes or until you see that the yeast is active.
Using your hands, gradually add the the flour into wet and knead with your hands until the dough pulls away from the sides of the bowl. Cover and leave in a warm spot in your kitchen to rise and rest for about 30 minutes.
Divide into six pieces and roll out into 8 to 10 -inch rounds that are about 1/4 inch thick. Dust both sides lightly with cornmeal and lightly poke the surface of your pita breads with the tines of a fork (careful not to poke right through).
Place a heavy cast-iron skillet (non-stick pan is fine as well) and heat to medium-high. You may place your pita dough on corn-meal lined pizza peel to slide onto the hot skillet.
Pour some vegetable oil in a small bowl and dunk some kitchen towel in it and grease your hot cast iron skillet.
Place your pita dough on the hot skillet and and fry the bread for a couple of minutes a side or until they start to puff and bubble up. Flip and fry the other side.
Place fried pita breads on to a large cotton kitchen towel and cover. Dab your kitchen towel into the bowl of vegetable oil and place another flattened pita dough on the skillet.
Repeat frying each pita bread and stack them, tucked inside the kitchen towel. Serve warm or allow to cool inside the kitchen towel until cooled. Store in a sealed plastic bag for up to a week or freeze.

I enjoyed cooking today, now its time to eat this lovely food…My favorite part about cooking!

Roxanne & Mike { Wedding }

The beautiful white sand and the emerald colored waters made for a stunning backdrop for Roxanne and Mike’s wedding. Saying their heartfelt vows as the sun began to set, left the sky painted with colors of orange, red and pink displaying such a romantic, and tender mood for the bride and groom’s wedding. Their wedding was by far a graceful and intimate wedding consisting of only close family, and with just the right amount details to accent the humble, but grand location of the emerald coast beaches. The bride’s beautiful mermaid style laced dress and her bright sassy teal high heels really made such a classic, yet fun stylish look. Roxanne and Mike were such a wonderful couple to photograph, and I truly believe their personally and love for each other shined through in these photos.

Meeting Neyland for the first time

It was a late night and Paul and I had just gotten off work. We were super excited to be heading over to the hospital to meet our first nephew Neyland Schmidt. When I first saw Neyland my heart melted, I couldn’t wait to hold that little man! After holding that precious baby in my arms for a while, I realized my husband might need a turn holding his nephew Neyland..haha! So with that I got my camera gear out and became crazy girl behind the camera taking pictures of every detail around the room, flipping lights on and off (for better lighting) and getting close to Neyland’s face for cute baby pictures. When it was finally time for Paul and I to head home, I’m pretty sure from when we left the hospital till when we got home, we both couldn’t stop talking about how wonderful Neyland was to meet and how proud we both were to be his Aunt and uncle! Shannon & David, you both are going to be and already are such wonderful parents, I know that Neyland is going to be such a smart, loving and strong boy because of his loving fun and awesome parents!! We love you both!!

I truly love when married couples renew their vows to each other. I believe it is such an act of love displayed for one another. Autumn in the air

As you may well know autumn is in the air, which means it’s time for fall fairs, pumpkin carving and enjoying the cool crisp weather. My favorite part about fall is being able to wear my scarfs and beanies with almost every outfit. I recently did a photo shoot for my super cool friend Erin, who is an amazing crochet genius. Beach Family Session

I really enjoyed the family session I did recently because I got to take a lovely drive to Orange Beach with my wonderful mother along for the ride. We had such a fun drive over to Orange Beach with plenty of coffee, jazz music and lots to talk about. Mom and I were two peas in a pod. Meeting this wonderful family was such a delightful treat, even down to their red and white Alabama gear. The weather was just right and the sunset added a perfect touch to a great day. Donny Black

I really enjoyed doing Donny’s photo session this week in Seaside! I just want to start off by saying Donny has an amazing voice that will knock your socks off and his raw natural talent to act is incredible. Just a side note (you should probably invest in getting his autograph now before he becomes super famous). He recently did a jaw dropping performance as the Tin Man in the North West Florida State College production called, The Wiz , the production and WHOLE cast from the show was like something off Broadway (So amazing and talented!!).
